Ingredients:

For the Dough:

  • 2 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet active dry yeast (2 1/4 tsp)
  • 1/2 tsp salt
  • 1/2 cup whole milk, warmed
  • 1/4 cup water, warmed
  • 2 large eggs, at room temperature
  • 2 tbsp unsalted butter, softened
  • 2 tbsp cannabis-infused butter, softened
  • Vegetable oil, for frying

For the Filling:

  • 1 cup raspberry or strawberry jam
  • Powdered sugar, for dusting

Directions:

  1. Prepare the Dough:
    • In a large mixing bowl, combine the flour, sugar, yeast, and salt.
    • In a separate bowl, mix the warmed milk and water. Add the eggs, softened unsalted butter, and cannabis-infused butter, blending until smooth.
    • Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
    • Knead the dough on a lightly floured surface for about 8-10 minutes until it becomes smooth and elastic.
    • Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours, or until doubled in size.

  2. Shape and Fry the Sufganiyot:

    • Once the dough has risen, punch it down to release the air.
    • Roll the dough out on a floured surface to about 1/4-inch thickness.
    • Use a round cookie cutter (about 2-3 inches in diameter) to cut out circles of dough.
    • Place the dough circles on a parchment-lined baking sheet, cover with a towel, and let them rise for another 30 minutes.
    • In a large, heavy-bottomed pot, heat the vegetable oil to 350°F (175°C).
    • Carefully drop a few dough circles into the hot oil, frying them in batches. Fry each side for about 2-3 minutes, or until golden brown.
    • Use a slotted spoon to transfer the fried Sufganiyot to a paper towel-lined plate to drain excess oil.

  3. Fill and Serve:

    • Fill a piping bag fitted with a small round tip with your chosen jam.
    • Poke a small hole in the side of each Sufganiyot and pipe in about 1-2 teaspoons of jam.
    • Dust the filled Sufganiyot generously with powdered sugar.

Serve your cannabis-infused Sufganiyot warm and enjoy the festive flavors with a special twist. Happy Hanukkah!
